Melissa McCarthy Almost Wasn't Sookie
Alex Borstein was originally cast as Sookie but had to back out due to a contract with MADtv. The role was then recast with the Sookie you know: Melissa McCarthy. No problem! McCarthy was an excellent fit for Lorelai’s best gal-pal (besides Rory, of course). Although this opportunity fell through for Borstein, she still makes numerous cameos on the show.

The Gilmore Girls's Sets Were Built on a Sound Stage
The entire first floor of Lorelai and Rory's home was built to scale within a sound stage. But you could also access Sookie's house from Loreliai's foyer through a "coat closet" door. Exterior shots of the home, the foyer, and the hallways were filmed on an outdoor set.

Okay, you can't actually visit Star's Hollow, but you can visit the place Star’s Hollow is based off of: Washington Depot, Connecticut. The creators were inspired to write the show after visiting the small town.

Jackson Douglas Played Jackson Belleville
Playing the role of Sookie's love interest, Jackson Belleville, was likely an easy leap for actor Jackson Douglas, who (as you probably noticed) shares the character's first name. Douglas was also thisclose to acting as the love interest to his real, IRL wife, Alex Borstein, who was originally cast as Sookie.

You're completely correct in thinking they talk fast on the show. The average Gilmore Girls script is double the length of a standard TV script. That's a lot more lingo to throw in so it's fitting the show's tagline is "Life's Short. Talk fast."

Daniel Palladino, an executive producer on Gilmore Girls, was also a producer and head writer on Family Guy. Guess it only makes sense that Family Guy has mocked Gilmore Girls. Notoriously, they did a skit where Lorelai and Rory make out. Ew!

We Might Never Know the "True" Last Line
Gilmore Girls was produced by Amy Sherman-Palladino and her husband, Daniel Palladino. Amy had always imagined a last line for the series, but because of contractual issues, Amy and Dan left the show after season six. She’s still “mum's the word” on the ending she had planned.
